How to make a yummy meal with pomelo

Pomelo Summer Salad
Summer salad can not only cool down your body under the hot weather but also help your body gain enough vitamin C to fight back diseases. What’s more, it is a good recipe for those who are under diet or want to lose weight.
Serving size: 2
Cooking time: 20 minutes
- 1/2-1 pomelo
- ½ lb shrimp
- ½ lb pork belly
- 1 purple onion
- 1 lime
- 1 oz. peanut
- Vietnamese basil, or mint
- Salt, pepper, chilly for more spicy taste
- Coriander for garnish
Step 1: Cook the shrimp and boil pork belly until tender. Normally, I want to cut the shrimp into half for more servings, but if you think it’s not necessary, it’s completely fine! Also, you need to cut pork belly into slices.
Step 2: Cut the top and bottom and then cut onion in half . Cut into thin slice. Stir-fry the cut onion under high heat in 5 mintues until crisp-tender. Then, put it aside to cool.
Step 3: For mint or basil, you can stack up the mint leaves, roll them lengthwise and slice them across. Or, you can also leave them the way they are for the later mixture.
Step 4: For the whole pomelo, cut it into half, peel off all the white skins, and take out all the flesh. Gently use your hand to break its segment into small chunks.
Step 5: Well mix all the ingredients: the cut shrimp, pork belly, basil, pomelo, lime, crushed peanuts and all the spices based on your taste, altogether in a big bowl.
Step 6: Serve it in a nice plate, put the crispy stir-fried onion and coriander on top to garnish. You can leave out the coriander if you do not like its smell but then, all you can do is to enjoy a delicious refreshing salad dish!
Fried Chicken with Pomelo Sauce
Serving Size: 2
Cooking time: 30 minutes
- 1 pomelo
- 1lb chicken breast
- 2 tsp olive oil
- ½ cup chicken broth
- 3 tbsp butter
- Toasted walnuts and coriander for garnish
Step 1: Peel off the skin of pomelo fruit and take out all the segments. Leave ¼ of it into 1 other plate and juice the rest to make sauce.
Step 2: Season the chicken breast with salt and let it rest for 10 mintues. Then, fry it with a little amount of oil until well-cooked in both sides. Normally, I cook around 3-4 mintues for each side. Then, take it out into the serving plate.
Step 3: Put olive oil into pan, pour in the pomelo juice and cook it in 6 minutes under low heat.
Step 4: Then, put 3 tbsp butter into the pan and cook until the sauce reaches the taste and consistency.
Step 5: Pour the sauce on the chicken breast, place the pomelo you left above on the plate and garnish with crushed walnuts and coriander. You have a irresistibly yummy dish for your main course.
Pomelo and Orange Juice
This juice can help your body gain good amount of vitamin C to overcome any regular infections like cold, flu, etc.

Cooking time: 10 minutes
- ½ pomelo fruit
- 2 oranges
- 1-1½ tsp of honey
To get a better juicing process, roll the orange out on the surface. This is a great tip to get more juice out of your fruit. I did it before while my brother did not, then it turned out that I got the more full cup of juice.
Step 1: Peel off all the skins of both pomelo and oranges carefully because any left white skin may cause bitterness for the juice. Then, take out all the segments.
Step 2: Put it into the blender. You can strain out the mixture or you can drink as it is for better fiber consumption.
Step 3: Pour it out into a cup and mix honey well into the juice to serve sweet. And then, serve with ice for cold drink.
